The word souvlaki comes from the Greek word "souvla," meaning skewer.
Traditionally, small cubes of pork were marinated in olive oil, lemon, garlic, oregano, and herbs before being grilled over charcoal.

Ingredients
Pork

2 pounds pork tenderloin or pork shoulder, cut into 1½-inch cubes
Marinade

Instructions
Step 1 – Prepare the Marinade
In a large bowl, whisk together:

Step 2 – Marinate
Add the pork cubes and coat evenly.
Cover and refrigerate for 6–24 hours.
The longer the pork marinates, the more flavorful and tender it becomes.
Step 3 – Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes.
Thread the pork evenly onto the skewers.
Step 4 – Grill
Preheat the grill to medium-high heat.
Cook for 10–12 minutes, turning every few minutes until the pork develops a beautiful char and reaches an internal temperature of 145°F.
Remove from the grill and allow the meat to rest for five minutes.
