What Is a Bakaliko?
If you've never heard the word "Bakaliko," you're not alone.
In Greece, a Bakaliko is a traditional village market—a place where neighbors gather, stories are shared, and families purchase the everyday ingredients that bring meals to life. Long before supermarkets existed, the Bakaliko served as the heart of many Greek communities, offering everything from olives, cheeses, honey, herbs, spices, coffee, and other household staples.
For generations, the Bakaliko was more than a store. It was a meeting place. Villagers would stop in to pick up ingredients, exchange news, discuss family events, and enjoy the simple hospitality that has always been central to Greek culture.
The word itself comes from the Greek language and has become synonymous with a neighborhood market built on trust, relationships, and quality products.
The Greek Tradition
Throughout Greece, every village had its own Bakaliko. While the products varied from region to region, the spirit remained the same.
Shelves were filled with local goods. Olive oil arrived from nearby groves. Honey came from local beekeepers. Herbs and spices were gathered from the mountainsides. Cheeses were crafted by local families using techniques passed down through generations.
The Bakaliko connected people to their food and to one another.
It represented something that many people today are seeking once again—authentic ingredients, trusted sources, and a sense of community.
The Story Behind Baba's Bakaliko
For more than forty years, visitors to the Atlanta Greek Festival came to know a special place called the Bakaliko.
There, my father, Nick Economos—known affectionately to many as "Baba"—helped introduce generations of Atlantans to the flavors and traditions of Greece. Visitors could browse Greek cheeses, olives, honey, coffee, herbs, spices, and specialty foods while learning about the culture and recipes that made these ingredients special.
Over time, thousands of festival guests came to associate the Bakaliko with hospitality, quality, and authentic Greek products.
What started as a simple market became a beloved tradition for many families who returned year after year.
