What began as a small Greek market, or bakaliko, became a place where thousands of visitors discovered authentic Greek cheeses, olives, honey, coffee, herbs, spices, and recipes. More importantly, it became a place where people gathered, shared stories, and experienced the warmth and hospitality that define Greek culture. For more than four decades, visitors to the festival knew my father as the smiling face behind the counter, always ready to offer a sample, share a recipe, or tell a story. As I watched him grow older, I realized these traditions deserved to live beyond the festival grounds. Baba's Bakaliko was created to preserve those memories and share them with a new generation. Today, our mission is to bring authentic Greek ingredients and family recipes to kitchens across America while preserving the stories, culture, and hospitality that inspired the original Bakaliko. Through this journal, you'll discover recipes, family stories, product spotlights, cooking tips, and memories from the Greek community that helped shape this journey. Whether you're reconnecting with your Greek heritage, discovering Mediterranean flavors for the first time, or simply gathering around the table with family and friends, we're honored to share this tradition with you. Thank you for bringing a piece of our family to your table. Kali Orexi! (Good Appetite!) — Jimmy EconomosFounder, Baba's Bakaliko
